Vegetable & Cheese Enchiladas
There’s a reason we use the phrase “the whole enchilada” to mean “something in its complete, totally intact, entirety” — the enchilada is one entrée that’s got everything. Warm, toasty tortillas, bold, full-flavored sauce, rich, savory fillings...it’s no surprise that we’ve carried so many styles of enchilada in our freezers over the years. Our newest entry into our enchilada oeuvre, however, may be our most exciting yet. Made with a vast variety of veggies, including bell pepper, corn, zucchini, green chile, and nopal cactus, along with some marvelously melty Monterey Jack cheese and savory (but not overly spicy) salsa roja, Trader Joe’s Vegetable & Cheese Enchiladas are everything that enchiladas ought to be: hearty, filling, and decidedly delicious.
Easily prepped in the oven or microwave, these Vegetable & Cheese Enchiladas are an excellent choice whenever you need a quick meal. They can be enjoyed entirely on their own as a quick work lunch, or paired up with various sides, like our Spanish Style Rice or Mexican Style Roasted Corn for a more involved weeknight dinner. Feel to free to accessorize, as well: we’re particularly fond of pairing these Vegetable & Cheese Enchiladas with a dollop of cool sour cream and some sizzlingly spicy Habanero Hot Sauce, for example.
